what are the best books to begin studying openings?

I have many, from Fine, Nunn, MCO, etc.

 

Where to begin?

The ECO sounds like a great resource but isn't Informant known for using symbols to notate their games?  I like the Complete Hedgehog (both volumes) as an example of what a good opening text should be: comprehensive, explains ideas and strategies, gives important main and sidelines, etc. 

The ECO of course is good but you need to have a good knowledge foundation first.  Same reason why ECE shouldn't be anyone's first or even fourth, maybe not even fifth endgame resource. 

For openings I'd start with openings you play and learn the common plans and strategies associated with them. 

Your first multi-volume text on the opening should be something like this: the series seems like it's the Comprehensive Chess Endings of openings:
