Openings for Blitz
If you're striving to win, you should play the openings that you know best—regardless of the timer.
Though, if you're just striving for variety, play anything. Play classically one game. Play hypermodern the next. Decline gambits one game. Offer gambits the next. Mix it up to keep both your opponent (and yourself) on your toes. Your win percentage will likely drop a bit, just from occasionally running into positions that are quite unfamiliar to you. But it'll certainly keep the games interesting and fresh—and you might even discover another opening or defense that you'd like to add to your main repertoire.

Many ppl are pointing to books, so I'll offer up the following.
WHITE:
1. d4
if 1...d5, play 2. e4 (Blackmar-Diemer Gambit... great for blitz but can transpose to the French, and sometimes the Caro-kann so have lines ready for those as well).
if 1...Nf6, play 2. bg5 for the Trompowsky, which has some sharp variations, including the fun to play Raptor variation if 2...Ne4 is played.
BLACK:
Against 1. e4, play 1. Nf6 (recommended in the book ppl posted already)
against 1.d4, play 1.d5. If White follows up with 2. c3, play Nc6 (Chigorin). Tricky opening that White doesn't see very often which gives Black good piece play.
