Basically I like the concept of the benoni defence and was wondering if there was a way to play a setup that gave me the same opportunities with white or even against 1. e4
Playing pseudo benoni against e4 and as white

The truth of the matter is, no there is not!
The Benoni has specific ideas that do not apply against 1.e4, and surely not as White.

Actually you do have a fantastic way to get a Benoni/Benko as white as has been already said. The traditional Reti with 1.Nf3 d5 2. c4 d4 (...). Is a Benko gambit as white, which is not a gambit since it is a tempo up, you rarely get such positions but 2.... D4 is the best move for black so it is seen at GM level a lot. Generally very recommended.

It's still an apples to oranges comparison. The extra move changes the game. Sometimes for the better, sometimes for the worse.
English vs Sicilian - Dare you, as Black, to try to play the Yugoslav Attack if it winds up a reverse Dragon. You will die quickly as Black.
Colle System vs Semi-Slav Defense - Try to play the "Anti-Meran" lines there as Black. You will not survive.
Bird's Opening vs Dutch Defense - This is a case where the extra tempo is detrimental for White. When he plays 1.f4, Black has not committed to 1...d5, and so gaining total domination of e5 is harder than for Black to dominate e4 after 1.d4 has already been played. The domination of e4 is what offsets the weakening of the King by using the f-pawn instead of the d-pawn to control e4.
1.Nf3 d5 2.c4 d4 3.b4 plays totally differently than the Benko Gambit.
If you actually UNDERSTAND an opening, you should be able to play it from both sides. Not try to reverse it and think you are playing the same game. The only way it is the same is if you do this, which I witnessed once:
1.e4 e5 2.f3 Nf6 3.f4. This is White playing a true Latvian Gambit.
My repertoire is based on understanding, not memorizing.
White - Trompowsky vs Nf6, Veresov vs d5, Veresov frequently transposes to the French, like 1.d4 d5 2.Nc3 Nf6 3.Bg5 e6 4.e4.
Black - French and Petroff vs e4, Mexican Defense vs d4, which allows 1.d4 Nf6 2.Bg5 (I play the 2...c5 line when playing the Black side of this).
So if you truly love the Benko and Benoni, you should be a d4 player with White and be really happy when Black plays an early c5, just like how I am more than happy to play the White side of a French Defense.
So I find the benoni defense really fun but I was wondering, is there a kind of benoni setup playable with white and playable with black against 1. e4?
