Tarrasch: Does this work?

I've been pondering this in my head...during class. Does this work?
Work for whom?
Obviously, white stands quite a bit better in the final position. The flip side of which is, of course, that no defender would play like this.
That's not the Tarrasch. Also, 3.dxc5 is much less popular than 3.cxd5, and I think a move like 3...Nf6, 3...e6 or even 3...d4 would be better than 3...dxc4.
