The Fianchetto: pros/cons

I'm a mid 1200s player who has gained 200 points in the last 6 weeks ago either because of or in spite of religiously fianchettoing my king side bishop as both black and white. It's gotten to a point where it's the only way I know how to play, it's like a wubby lol...also I ALWAYS open English and almost ALWAYS defend Dutch unless it's simply not an option..again, both are like security blankets but as I watch a lot of Kasparov and Carlson vids on YouTube I see them vary a lot in what they play as clearly you're not always able to play the same based on the opponent's styles but I feel like I force it too often, as I just know the moves surrounding my comfortable plays I can fight through it....OK, so basically I'm wondering how I would start to broadening my horizons by watching vids/lessons/players to try to switch it up a bit, and read my way into each game as opposed to blindly going with what makes me feel all warm and fuzzy inside(until I get waxed by the 1500+ players)....

ALSO: CAN SOMEONE DIRECT ME TO KNOWLEDGE ON DEFENDING KINGSIDE PAWN PUSHES(they get me a lot)🤓
