akobian plays the french exclusively, and he's in the 2700 club. i'd check his 1...e6 games out, big time.
You can check for some Armenian masters games: Petrosian, Lputian, Vaganian.
For modern players add GM Segey Volkov, he is regarded as a french defense specialist..Another one is GM Ding Liren a promising young talented player who is in the 2700 club..

Uhllman is interesting. I read somewhere that he followed someone's opening book on the French and lose as black. Then he threw the book into the dustbin and said "I will play it my way!!"
