What is your go to chess opening

At your level, knowing the opening principles is the most important step. You can read about them here https://www.chess.com/article/view/the-principles-of-the-opening. Your time would be better spent on chess improvement if you studied mostly tactics rather than mostly openings though. A simple opening that you can learn is the London System, which is a setup based opening and is a one that you seem to play already. The reason why it is easy to learn is because the moves involved for white does not depend heavily on black's moves. For black, a good opening that does not require much theory is probably the Caro-Kann

italian, bishop opening, and etc. Are some famous ones, probably those will work. For me, I started of with french (whichever opening you feel comfortable to use). Like sushima01 said, the principles of opening.

First get a good hold on the basic principles (center, development etc.) then i would say learn just two openings , one for the white side and another for the black side e.g learn London for white (best for beginners) as it covers all basic principles and you can play it against almost any opening.learn french defence for black. Just keeping playing only two openings and you will see your elo increasing gradually.

I love the english opening and play the g3,bg2 lines which is essentially a reverse sicilian. Biggest advantage of this is that now many people have seen it or played against it, and are likely quite unprepared. After c4,nf3 you can choose a good line that you want to play based on how your opponent reacts. Gotham has a pretty good video on this btw.
