When i play against the kings gambit, I just play and early e6 and h6 and all their sacrifices and tricks don't work. I simply keep the pawn.

My calculus teacher played the scotch gambit with great success in highschool, but I prefer queen's gambit.
I play King's Gambit myself, but Black can avoid the lines that have a strong White initiative.
The Smith-Morra, on the other hand, once accepted, gives White a lasting initiative and some positional plus in return for the pawn, and Black doesn't have a way to balance it -- there's no obvious "return of material" tactic available.
