What makes Chess Variants a chess variant?

I know that It's not a normal chess but is there like a rule about structure of the game or something that can tell it's some kind in a chess variant?

Put differently, how much do we need to stretch our definition or notion of "chess variant" so that, say, sudoku and poker are chess variants?

Sorry, I was drunk when I write that and totally forgot lol so what I meant is that What is the scope of chess variants and what elements they have to make them different from regular chess?
