Easy. Take a random 960 set up and replace 1 Rook with a Bishop and the other Rook with a Knight. Or take the same setup and replace 1 Knight with a Bishop and the other Knight with a Rook. Or replace the Queen with a Rook in Chess960 game.
I think the above is tougher as will focus players to work on their skills using particular pieces. Again your not allowed to have 2 Queens or 2 Kings and the limit on the number of some pieces is 3. So it would be also possible to have a setup of 3 Bishops and 3 Knights and 0 Rooks. The numbers for each can change but the total has to equal 6 for the above pieces mentioned.
How about allowing the players to freely place their pieces as they wish. The one who goes second can adapt to the setup of the first and thus neutralizes the advantage of the first move.
Thats how it is in Arimaa and it works pretty well.
