I agree that it is best to concentrate on opening principles before picking an opening, but if you're in need for some recommendations, Susan Polgar recommended the London System for White and the French Defense for Black as a basic repertoire. She has also said, however, that you don't need more than the basics until you're around 2000 Elo.

English/London = for white
Caro-Kann = for black
French is way too passive.

Well, Susan Polgar is a 4x Women's World Champion and a FIDE Senior coach with her own training program, I'm sure she knows what she's talking about when she recommends the French. Caro-Kann is also a good option (especially if you learn some of the Slav too for Black vs 1.d4); probably comes down to preference.

I like the French against the king pawn opening and the Queen’s Indian against the queen pawn. Primarily because the White player has little practice against them, and they are sound defenses. I practice them over and over, trying different opponent moves at https://chesspractice.com

For beginners, the Italian is the most archtypical.
Lately the Italian Opening has had a bit of a Renaissance at the GM level, so don't discard it as a beginner's opening.

I think the French also. Can understand the argument that it's passive if someone wants to keep playing the exchange variation, but then can learn a more aggressive (and more complex) opening later - such as the dragon or whatever. And the French will still be good to have at higher levels of play too.
Got a book recommended by kindaspongey written by English GM Neil Mcdonald "how to play against e4" which is a great way of starting out in the French. Excellent book.
