How can I attack against three pawns ?

A lot of times I find my opponent has three pawns in a row ( similar to f7, g7, and h7 ) and they are about to castle. If I land on Qxg7, then I can get their Rook and check. These three pawns can easily defend themselves by moving the g7 pawn to g6 ; also, an opponent can move their Knight to Nf6. In the example boards I included, the knight is already running around and this allows the rook to move to Rf8. Sometimes I can get Qxg7 while the knight is still on Ng8.
 
How can I line up my chess pieces for ?xg7 ? And, if my opponent move to g6 or Nf6, how can I transfer this attack so that my line up is not wasted?

This defense has multiple names depending on the exact opening. One name for this defense is the bogo-indian defense.
