While I'm not nearly as high rated as you, I tend to play more solid openings and not gambits and I think that has served me well in helping me improve
Thoughts on the Kings Gambit opening

My first Italian Game after switching from KG, it was fun, I won, and I'm excited to learn and play it more!

Nicely done!
I don't think 4. ... Qe7 is typical, but I think you responded well, got your King safe, challenged for the centre, and made the most of the Black King's vulnerability. I think your familiarity with the King's Gambit is why you aggressively pounced, and spotted the opportunities. But you also played an opening where you could get your King safe too (in the KG, you sort of have to adopt the attitude that King Safety is a myth ). Anyway, well done.

I played a few more Italian games and lost some, so I’m definitely learning! 😄
I'll state the cheeky opinion no one dared say...
The REAL reason people don't play the King's gambit is its has an extremely small draw percentage. 44.6 % white 18.7 % Draw 36.7 % black
To play the King's Gambit... you are either going to Win or Loose .... with White wining 10% more due to having the opening move
IMO... The King's Gambit is most tactical of e4 openings.. (and maybe all openings) I see people play it with a positional vent...
Thinking out load here.... Did the great's of that era know a thing or two? Maybe the King's Gambit is not conducive to playing with a modern treatment/ i.e in a positional vent. Seems to me that opening more than any other can produce legendary tactical blows...
At the Top, I don't see a GM with kind of bravado, that kind of machismo needed to play the King's Gambit.
Seems games with great tactics, are getting less and less.
Since you’re playing more OTB chess and studying positional play, it might be worth experimenting with something more solid—like the Italian Game (Giuoco Piano) or Ruy-Lopez. These will help you develop a well-rounded understanding of chess while still offering attacking chances.
