Which gambit should I use?

King Gambit. A bit dubious but very sharp and fun

As white, if e4 you can try the Danish gambit.

Queen's Gambit. Probably the most solid gambit out there especially since it's not really a gambit. I've created a Queen's Gambit study and an Indian Defense Study (anything other than 1...d5)

 

I checked your opening explorer and I have no clue why you play Qh5 so many times but I did see you play the Four Knights Variation which I recommend you play the Belgrade Gambit. Simon Williams has a great two videos on Chess.com on it which I recommend create a Lichess study for that opening so you can always refer back to it.

 

I also checked out Black and you play a lot of Qf6. Not going to get you very far but you do like Nc6. You do face the Fried Liver a little bit so you could try the Traxler but it's garbage and the mainline is better.

Icelandic (against e4) and Budapest (against d4) gambits were two I played as black when I was a beginner. I think they're better than a gambit like blackmar-diemar but I'm not sure they are that reliable. In the embedded video, I was nolonger a beginner when I watched it but I think it can be helpful for beginners, interestingly he also suggested icelandic gambit at the start.
