Capturing towards the centre should be the better one. Incase queenside pawn structure is blocked then perform queenside castling and attack the opponent's king side with some sacrifices if possible.

I agree with sibi_90. If you look at his end position you have one bishop pointing at h7, the other at h6. You have a queen on g4 and a lovely half-open file to get your rooks into the game. Seems a pretty good attack to me. I would play fxe5.

I play the Queen's Gambit, and often achieve positions like the one below. Suppose black captures my knight with his knight. Should I play dxe5 or fxe5? I know one of the introductory principles in chess is to capture towards the center, but I consider this position to be an exception because fxe5 leads to a more closed position with two white pawns occupying the long a1-h8 diagonal, limiting my attacking chances with the black-squared bishop should I wish to eventually play Bb2. Therefore, I have historically played dxe5, leaving open the option to play f5! and storm the kingside later. What do you think? Any advice in handling positions with similarly doubled pawns would also be appreciated.
