Deflection or "Removing the Defender" is the name. Its when you force the opponent to move their piece away from defending another (in this case if 14...Qxe5 you win the d7 knight and 14...Nxe7 you win the e7 bishop).
I think i kinda "discovered" a strategy/strategic theme but do not know the name

and possibly the famous engine i mentioned stock fish is specialized in positional play, there was a principle if i well recall: develop all the pieces and do not eat random pawns
omg 15 Nc6 variation you show is beautiful maybe in a non 3min/2sec game context I would have found it instead to rush to eat the pawn in A7

That is indeed a strategic theme which you found and even if it doesn't have a name it's actually good, wonderful.
Do not know if this is the just place in the forum because i am not asking for a full game analysis but one move,anyway i have never been analyzed an entire game by an human in my life so you are welcome if want to give me recommendations.
At move 14 when i as white have eaten the knight i have eaten a pawn then my queen can eat the bishop or the knight gaining one pawn from the exchanges, there is a name for this strategy theme?
I gave this to chat gpt but came with a lot of techniques so would like to share with the community.
kinda disclaimer I am 550 in 3/2 although i play since long time, do not want to study too much but relax and i think i played much better than a 551 in this game
