How can I, as a human, possibly come up with ideas like this?
Does anyone have any tips for me? What do you guys do in these kind of situations? I feel like I need to master this concept ASAP if I ever want to reach 1800+ rating.
The thematic way to meet a Pawn Storm is to open the center, which exposes the advanced Pawns as a weakness rather than a strength.
In the given position, Black is poorly placed to do this, which probably indicates that his earlier moves were mistakes... allowing a position to arise in which he would be subject to a Pawn Storm without the ability to open the center and paralyze it.
If you mean... what is the best practical chance to avoid getting mated, then I would look at:
17. ... Nd7 (threatening to open the center with 18. ... Nxe5 19. dxe5 d4 followed by Qc6)
This almost forces White to play 18. f4 (so that he need not recapture with the d-Pawn) and then
18. ... f6 19. Ng6 Rf7 20. g5 fxg5 21. fxg5 Rxf1+ 22. Rxf1 and now 22. ... Qd8 ensuring that the Queens will come off if White continues to press forward with 22. gxh6.

At what nodes/depth you analysed with SF? SF can be as weak as 2600-2700 if you give 5 secs to analyse in common 4 cores pc..
I analysed with 500-700 million nodes of SF from your initial position, and it seemed likely that black is dead , SF is showing +1.25 at 700 million nodes, black will lose in about 65-70% of games. If you play 1 billion nodes per each moves of SF vs SF , i bet white will win 65-70% of games.
Black position is very bad. You should better have a better opening preparation to avoid such position.
Yes, the position looks already lost... but my line might be the best practical chance to avoid an early mate.
3..... c5 and dxc5 is not necessary, but not a mistake. (you dont get any benefit by opening "c " file cos you dont have any development advantage.
5..... d5?? is obviously a strategical mistake, that keep you in trouble the whole game. You practically lost one piece, Queen Bishop in the whole middle game
Simple QID set up system
5.... Be7
6......b6
7..... Bb7
8......d6.
9......Nd7, Castling and then play on "open c" file and queen side while controlling the center with Hedgehog pawn structure d6,e6.
QID is a very tough system to crack. You can practically play with QID against most 1. d4 including London, Stonewall.
This is a common theme that shows up in a lot of my games as black, regardless of whether I'm playing the sicilian, the caro-kann, the benoni or the nimzo-indian: my kingside always gets destroyed by a pawn storm! And this happens when we both castle king-side too, so it's not as if I can even blame this on opposite side castling. Here is a typical position I find myself in over and over again in blitz games:
