That pesky LSB again, is e5 - Be6 the way to go? Or Bb7?

Going over my game, I see that e5 comes up in the evaluation and then Be6. In the Carlsen Nepo game, Bb7 is played instead. How does black decide? Is it 50/50 both good or is there a way to decide which way to play the LSB? I'll post both games, and I won't focus on any specific move. Please let me know where black most likely has to make this decision in either game. Thank you.

You can rely on Nepo.
13...Bb7 to trade off the Catalan bishop 20...Bxg2 is a good plan.

If we are go on the idea to confront the bishop on g2, I am also seeing Bd7 - Bc6 played at the top levels. How is this better or worse than Bb7 besides the obvious tempo loss? What positionally would be the deciding factor or factors?
