I think the first thing is you haven't got control of e5 when you bring your knight out. This allows your opponent to attack your knight moving the pawn from e4 to e5 with the e5 pawn still being defended by the d4 pawn. Meaning the knight has to move again towards the queen side, leaving the king side pawns undefended once you castle.
