What do you think my elo should be with this gameplay?

I can't ever stay above elo 500, currently 480ish.

This game I think I played well and the opponent resigned after I forked his queen.

Above 500 elo most players play as such and often beat me easily.

That's really not how Elo ratings work. They work based on your results, not your game moves.

However, Chess.com put in a feature based on the popularity of "Guess the Elo" on streamers shows and yours for that game was:

Your actual rating after the game was 483. It looks like it wasn't far off.

You probably think that the fact that you saw a knight fork is evidence of a higher rating. You might be right. Keep up the good work.

Also that feature you posted, is it a free feature or another diamond subscription thing? Where do I find it?

Also that thing looks like game insights which requires a diamond sub unfortunately.

Play 30-minute games if you have the time, play 10|5 or 15|10 if you don't.

Use the extra time to think about the moves that will follow after you move the piece, and if anything can take it. Eventually, you'll near phase out blunders.

Gosh I feel very proud of avoiding being checkmated by the enemy queen in this one, I think the moves after their queen moved to H3 took me the most thinking I ever did:
