Is there any venue on this site where I can practice checkmating my opponent who has only their king remaining with me who has only my king and TWO bishops? How about TWO knights?

FYI: A checkmate with two knights is only possible if the opponent intentionally blunders (except in extremely rare circumstances), so it's pretty much pointless to learn. Only the double bishop and bishop + knight mates really matter, as they are able to be forced.

And now, to answer your question: Lichess is the answer to your problems.
