When playing Daily/Correspondence, is it acceptable to use Lichess' opening explorer since it is completely free as long as I turn off engine recommendations?

Yes. An opening explorer with the engine suggestions turned off will be fine.

You can use any sort of reference you like, as long as it isn't

(1) alive. You can't ask GM Magnus Carlsen what move you should make.

(2) an engine. No engine evaluations allowed, whether from an engine or from an opening explorer.

(3) a tablebase. You are not allowed to look up your endgames in a tablebase, even though that isn't really an engine.

So books, Youtube videos, and such are OK, as are opening explorers and databases as long as they don't offer engine suggestions.
