You're talking about a book line, castling early there is great!
If you follow 'the book' you won't have to worry when to castle, you will be told when.
In lines that leave the 'book' before castling... well, good luck :).

I've seen more Kings chopped sooner while they were in the middle.
That being said, he has an attack brewing. But both his bishops are hemmed in. His development lacks due to pawn moves. Strike in the center. Re1 followed by d4 is one way. Open the center with his K in the middle and you'll have an entertaining game.
As far I know everone says castle early, but they don't say castle as soon as possible. I generally castle for 2 reasons: my king is being attacked; I want to develop my rook
What is it about your position you don't like (especially up to move 10)
Also he has a clear plan, so you need to develop a clear plan as well
your first mistake was 5.h3. What were you trying to do? Bet you there is a similar move that may not look great but will work fine. h3 weakens your castle rather badly and invites moves like ...g5 or even ...Bxh3.
King in the center is weak. Like you say, perhaps save the castling for a few moves. Perhaps move all your minor pieces first and see which side is safer to castle on.
good luck
I don't know you, but while learning, those chess tips like: secure the center, develop quickly, don't get out the queen too fast, etc are for me carved in stone.
One of them is "castle early". Of course sounds wise, but it often happens to me that I castle so early that my opponent aims all his/her strengths agains my king. For instance, please look at the following game. I was white:
We played a little more, but the point is that I think that because I castle soon (and my opponent don't), he had a clear attack objective. Maybe, if I would have continued developing my pieces and delay castling a little, I could have done better. From now, Black plan could be castle queenside, bring his other rook to the queen side, advance his f pawn (besides the "g" and "f" ones). So, the tip cound be, "castle early, but not too soon"!
What do you think? Where did I go wrong with my game? Any other "general rule/tip" that from your experience you should recomend to think twice?
