Its almost impossible to beat a mistake move of 1800 rating. We can see GM games that it is neccessary that one of the GM players to make a mistake move of 1200 or 1400 rating in order for the opponent to win afterwards!!

Its easier to beat them if you are lower rated, they generally get overconfident and play bad moves, done it plenty of times.

Yes, I've won against 1800 level players many times before. I will say though, when you are first starting out: even 1500-1600 players seem invincible and know so much chess information!
The higher rated you get, then the more you realize people at that last level didn't know. 1600s realize how much a 1400 doesn't know. 1800s realize how much a 1600 doesn't know. You get the idea and this pattern goes up even to Grandmasters recognizing how much chess information/ability even other titled players do not have.
