Help me get a good response against 1. e4!

I don't like learning opening theory, but currently I'm struggling against 1. e4. I want a positional, low risk opening, with small theory (I play the English and Reti with white, although sometimes when I'm in attacking mood, I go with 1. e4). Please do not suggest:
1. … e5 (Boring)
1. …c5 (high risk)o

Hello! 900-rated Black pieces main here. Not the most credible, but I'll put in my two cents.

Playing as Black, I would say e5, but you don't want that. If you are feeling adventurous, d5 is good in faster games, at least in my opinion, since if exd5, then Qxd5, and if d4, then dxe4. I've also heard good things about the Caro-Kann (c6), which also allows you to avoid a certain gambit that has personally traumatized me.

Since you can only premove one move ahead for some reason (#JusticeForiOS), I think these openings would be a good idea in faster and slower games, since they are only two moves long.

e5 is my top opening. Can lead to some great openings like the Italian game.

e6. I hate this but it seems popular…

c5. Also popular.

c6. The Caro-Kann is really good, but underplayed due to its riskiness.

Nf6. This is a good opening but it normally leads to an opening that could just as easily be played with e5.
