How can lower ranked players play such accurate chess?

I'm not a great player and consider my true level to be about 1450. But if I slip down to about 1350 after a bad run of games, how come the opponents seem tougher.

I just lost a 5 min blitz game to a guy with a 1340 ranking and computer analysis revealed he/she played way more excellent moves than me with a best move accuracy of over 60%! Surely that's impossible without cheating? If he/she was that good their rating would be much higher?

Has anyone else experienced this?

Engine analysis doesn't really say anything about the level or skill of play. If your opponent blunders a full rook or queen on move 4 stockfish will pretty much think you'd have played a perfect game when converting the advantage.

No - this was very accurate chess that I was up against - and in a five minute blitz game. I'm not under any illusion that I played well, but I didn't play poorly either. I was thrashed. That just doesn't add up to me.

Around 1200-1400 is unpredictable. People could be beginners or be underrated of they’re just starting

95% of my opponents even with rating under 1000 play max 1 inaccuracy per blitz game - super fun :(

I often experience this. I am ca 1400 Fide and have lots of games with Caps 90-99, some of them above 60% best move and one was ca 90%  but that one was won in 11 moves (10 best moves and one good). I also often play below Caps 50. At my level there is huge difference in the quality of play from game to game. My positional understanding is sometimes spot on, sometimes misunderstanding, and I often am steering my games to victory or to the ditch. Blunders happens unfortunately in many games.  Much because my priority is tempo before safety, I can leave a lot hanging because the attack . Tactically, in blitz, I am gambling intuitivly and  win or lose. When I guesstimate correctly it can be really good, and my nephew says I play like Morphy in my best attacking games.

When I get the opening right and wins the initiative I play at 1700+ Fide, when I Blunder, open wrong or play passive I am definitively playing below 1200.  

My blitzrating right now is 1318. I have 1600+ blitz friend that I play a lot, and lose a lot, but there are several wins in-between.
