The Learn/Practice/Custom Position feature will let you play around with all the pieces on the board. You can play a game, or go through iterations, or you can set a custom position and then play against the computer from there.

I don't believe that's possible.

Actually, if you go to the Variants server, choose a variant type, there will be an Analyze button
