How to defend in chess?

If you attack, he must defend. If he attacks, you must defend.
Place your pieces in positions where they can defend each other and control key squares in your territory.
I like to place my pawns in a zigzag order, that way they protect each other and maybe others

Yes. Out maneuver him.
Many people have entirely the wrong idea about "attacking". Attacking does NOT give you the advantage. You gain the advantage by out-maneuvering your opponent. Then, AFTER you have the advantage already, you cash it in by attacking.
Attack is not a goal to strive for. It is a process. It is a method for converting one form of advantage (eg: better development, active pieces) into a different and more easily exploited form of advantage (eg: mate or win of material).
