I don't play quick games, for the identical reasons you stated.
I do, I really am not good at it. I honestly do not understand how people think so fast and often play so well in 1 minute games. Most of my 1 minute games end with my time running out and my opponent still having 20 to 30 seconds left.
Well I was watching my friend shuttlechess play this super good Quick Player and I was just amazed watching them go at it. Shuttle asked me if I wanted to play and I agreed. What happened next will astound you as I actually won the game with mate! I know I'm still in shock, because he didn't play half bad.
