Is it bad to prefer one minor piece over another. (I like knights)

No, I like knights too. Love getting forks with them (not the utensils, though, I like those too)

Also, if you don’t have a good sense of all the pieces on the board, it’s difficult to see bishops in the corners. Especially when surrounded by many more.

In one way its a good thing - you recognise a personal strength.

OTOH, it's a personal weakness - if you get the wrong combination of pieces, you understand you handles them badly.

Short-term - steer towards piece combinations which suit your strength.

Long-term - Fix the the weaknesses.

Some prefer Bishops, some prefer Knights and some prefer women. Nothing to feel ashamed of. You can't control whom you are attracted to.

It’s actually not too bad as long as you realize 2 bishops are better than bishop + knight or 2 knights.

But one bishop is pretty close to equal one knight.

     It's fine to prefer knights to bishops or vice-versa if you feel more comfortable with them or are more proficient in their use, but you have to realistically analyze every position, and in positions where bishops are more useful, exchange your knight for the opponent's bishop.

It is bad to trade a bishop for a knight without good reason to do so.

Knight is better. Although bishop could come in handy it just depends on the situation but the reason I prefer knights is because the are easier to get around or out of a sticky situation and can’t easily be killed

It's okay. Once you get crushed by the bishops you might have to reevaluate your preference...
