Can someone explain to a noob like me how this could end up a draw due to "not enough material"?

Black ran out of time and can't win. White doesn't have sufficient mating material. That's a draw.

I had 7 seconds on the clock left and was pushing two pawns, promoting them to queens.

Just don't get it.

The server keeps the official clocks. The game results shows it was a timeout, so the server didn't receive your last moves before time on the clock expired.

You ran out of time.

Black ran out of time. White doesn't have sufficient checkmating material. Neither player can win, so it's a draw.
