Maroczy Bind VS Sicilian Taimanov

Sicilian novice here! Why does the Maroczy Bind score so badly against the Sicilian Taimanov? Or, more broadly, why do most alternatives to 5. Nc3 (excluding the Szen) score badly against the Taimanov?

1. e4 c5 2. Nf3 Nc6 3. d4 Cxd 4. Nxd e6 5. c4?! ... (50%+ win rate for Black)

If I played black here, how could I seize an advantage against White?

Unless white takes the knight.  I always play 5...Qc7

Without forcing ... d6, the Maroczy structure allows black to exploit the dark square weaknesses in the centre with ... Bc5 or the loose e-pawn with ... Bb4. 5.Nb5, d6 6.c4 is a respectable system for white, though rather unfashionable.
