Tbh, I was expecting 1... d5, but 1... b6 is also cute, that's something most opponents of Morphy and Tarrasch were incapable of doing in the 19th century

3.e5 to some degree over-extends White's center and also opens the b7 Bishop's diagonal. Since this is a hypermodern opening, Black will soon be trying to knock down our center, so we'd rather be developed and not extended too far when that happens :)
The problem with e5 is that the chain gets undermined by c5 and then Nc6, that's why b6 was played in the first place
