Ultimately, it's down to the winning side to prove they know how to convert a win. Don't bang on about how you hate people that don't quit, prove to them you know how to win and have some fun in doing it too! Ultimately, your chess will benefit from the practice.

Post any similar games you've had where you've made a mate more complex than it needed to be in order to have some fun!

I think better practice would be to use your technique to win in as few moves as possible and/or practice stopping all opponent counter-play.  If he has just a king left, but his king in a box.  A lot of times, if he is reduced to just shuffling the king between two squares with literally no possibility of anything else ever, they will then resign.  If not, you can then proceed to do whatever you want.  Just an idea.
