Playing nothing but Rapid & Bullet will always leave your chess missing out!?

Seems to be a Pattern today with online chess sites and 70% of new to chess only indulgence is either Rapid or Bullet, this does though leave a gap in there chess where they will find it hard to improve, the reason I say this is out of experience, we have had new members at our chess club come and go so often and having played them in numerous games and watched them they tend to play weak between especially the transition between Middle and Endgame!? we had a new player shouting how his Blitz rating was 1960 we were short on board 5 so let him play time control was 1 hour 10 minutes for all your moves his opponent was Ecf 123 (Elo 1580) he thrashed his moves out at Blitz pace, his opponent was slightly worse so offered the exchange of Queens into an ending, but in doing so lost his advantage and entered an ending with Bad Bishop v Superior Knight and went onto lose this is a good example of why in over the Board play you have to adapt which is hard if you only ever thrashing bits out on a Blitz chess site, he was very angry at losing and sadly never returned, his opponent offered to play though his game but he refused, a missed opportunity shame!
