I think you are confusing "losing" (or "sacrificing") your queen to "exchanging" it ... losing your queen without compensation is a reason for resigning in most cases, at least in everything slower than blitz if your opponent isn't in big time trouble (or you have a forced mate with your other pieces).
If you "sacrifice your queen for theirs", it's an exchange, not a loss/sacrifice, so you're still even with your opponent as far as material is concerned ... yes, some players like to avoid queen exchange as they feel they don't play well without it, other players (like me) like the queen exchange as they feel more comfortable if this dangerous piece of their opponent is off the board ... it's a matter of personal style, just like one's opening choice, and objectively one should of course exchange his queen exactly then when it gets them an advantage (for example an advantageous or "won" endgame).
I am finding that alot of players are "queen dependent", you capture their queen, they either resign or don't know how to play. Because I make dumb moves and lose my queen quite frequently lol, I've learned to play without the queen, so I'll always sacrifice mine for theirs, especially a stronger opponent.
