That depends on the position. Is it (or can you make it) a position where the Knight or the Bishop is better? Deciding on these kind of questions is what makes a strong player.
Knights is often best in rather closed positions. In endgames they prefer pawns at only one flank. Together with a Queen the may be trickier than a Bishop.
Bishops trive in open positions. They may be bad when bloched by your own pawns. They may be strong together with their collegue (the Bishop pair).
Yes. In my opinion, knights are a much better piece, but it also depends the phase of the game you are in. If it's in the middlegame or opening, probably. I think knights are better in the opening and bishops are better in the endgame.

I agree that knights are better. You can capture lots of pieces and also fork.
