if mate is imminent then it is considered polite to resign otherwise you're saying you don't think the other person is good enough to figure out the last couple simple moves

also it's the acknowledgement that both players have better things to do then play out the last couple moves just like when you have to leave your computer and resign this saves both players time so they can move on to other games
