Even at my level this happens especially against d4. There are so many people that play the London, the Colle, the Veresov or anything other than the Queen's Gambit. The except would be the Blackmar-Diemer because it is a Gambit which tries to spice things up. Since I like the Semi-Slav, I have a Chessable's course on it where it goes into some of these boring openings.

I prefer daily games but I also enjoy playing blitz from time to time, usually 3 minutes.
This is a bit of a rant but I get so extremely bored with certain players that play the most defensive and boring type of chess you can imagine, even as white, no creativity at all, no traps, often no attacks, just doing as little as possible for time.
I've sometimes just tried it out myself, as black, I just play as boring as I could possibly imagine and then I wait and see how long it takes for white to actually do something, often time it takes forever and I can win by time with that strategy but it's so dull..
I know I shouldn't complain about it really, it's up to me to break through it somehow and so on, but I wanted to rant a little, I mean it's a 3 minute blitz and I'm not rated high so it's not like it's to protect your rank, just be creative and do something.
