I like the Italian for white aka e4, e5, nf3, nc6, bc5, or the Scandinavian modern aka e4, d5, exd5, nc6 (o think thats the proper notation)

Yeah, its pretty simple but it can also be expanded on a bunch, theres all sorts of gambits which make it super fun

I would play London System and English Opening for white and for black I would go with Caro-Kann Defense

Honestly, I hate so say it but the French is also really solid, its way to dull to me but its very solid

If there was a "best" opening, why would people play anything else?

Im pretty sure she means most beginner friendly or the easiest to grasp, things like the ruy Lopez are gonna be way beyond beginner skills (mine as well 😔)
