Bobby Fischer Teaches Chess. It's a book by Bobby Fischer, Donn Mosenfelder, and Stuart Margulies. Fairly simple to understand.

For beginners, it's a great start, it's not an all around book, yes, but in my opinion, it's one of the better and simple options for beginners.
