Because it develops a pawn into the centre, and frees up the bishop and queen for further development

Usually you'd wanna get a pawn into one of the four central squares, so D4 as white is fine too

Well it is difficult to say. The two main options are d4 and e4. But depending on the playing style and experience d4 or e4 is the better option. Also there are other options like g3 or b3.
Why does black queen take h4? And why does white queen take night? Looks like super beginner to me.
