Truly...the King. Nothing beats a pawn ending with just the kings left to battle.
I ask a new group of juniors whether they prefer Knights or Bishops. This splits them into roughly two groups. I then ask them why they have this preference. After 5 minutes discussion they are ready for some chess. The stronger ones mention the number of mobile pawns as the main factor affecting these pieces.

If pieces rather than piece it has to be the bishop - who ever heard of the knights pair.
Bishop pairs because a bishop alone cant track all colors, one bishop per color so it's a weakness. Knights don't have this problem.
