I find some games I play are symmetrical and feel rather dull leaving me wondering what now? An example is this (me as black) e4 e6 d4 d5 exd5 exd5, sure I can go develop my pieces but he does so in a similar fashion at it feels like what should I go for or what can I do to try win?

This is just the Exchange French. I thought you were talking about one of those positions where the pawns are all locked up because both sides kave kept symmetricallity for 10 or 15 moves or so.  Perhaps you have an example from one of your games?

There are lots of books and articles available on how to play the Exchange French Defense. Here's one:

There is a whole series of videos available on chess.com- Completely French.
