Morphy's knowledge and intuitive understanding, if he were born in the late twentieth century and exposed to the developments in chess threory that have taken place since his death, would easily put him over 2900 Elo.
I have no clue how good someone with Morphy's genes would be in 2015's culture. Personally, I doubt he'd play chess at all.
But, talking about the historical Morphy, we have his games so we can judge the quality of his chess based on actual evidence, not conjecture.
Based purely on the chess skill displayed in Morphy's games, Morphy played at a 2344 elo for his career.
Steinitz' best was a 2495 performance against Gunsberg, but was generally around 2340 strength.
Lasker (fin de siecle) averaged 2471 playing strength against Steinitz.
These numbers aren't conjectures about counterfactual history, these are objective measures of the moves made and are equivalent to today's FIDE's ratings.
