I've reconsidered. I think my fave has got to be whichever one mates the king, be it pawn, queen, or anything else.

the knight is the most interesting piece in it's shape. Also because it's the hardest to make, it contributes most to the value of the set. my favorite knights are those of the classic staunton sets. I think that it's also the most illustrated piece because of it's distinctive and perhaps obvious shape.
It also moves differently from other pieces so in the game knights are my favorite too.
Knights are interesting
Knight. Simply put.
I like the board. It's aesthetically pleasing to the eye, meshes both light and dark, and levels the playing field for the combatants.
Also, on a metaphysical level - it is involved in every move, yet never moves itself. It is everywhere and nowhere in the game. It is needed to win a game, yet can never be defeated itself. It can be won or lost, but never moves or chooses a side on its own.
What piece can possibly be better than the board itself?

The PAWN's ae really special for me as there are just SO MANY of them. They can help set an attack or place a really good defensive screen aroun the numero uno-the KING!!
I like them as they take a shellacking when they are taken off the board during an attacking game BUT never complain about mistreatmnet or unfair condtions!
So well behaved.LOL. Love my PAWNS.
P.S. If the had a sword - WATCHOUT!!
My favorite piece is the king... not so much to think about without him
knights they are good at forking and controlling squares that sometimes your opponent cant reach
Gotta go with the Knight, if for no other reason than there's no greater feeling than getting a good Knight fork. :-)
If I can say this, then my favorite piece to use is the pawn phalanx. If that is cheating, then I definitely also love the knight.

theres nothing like a decent pawn chain to be a pain in the neack but the bishop pair is the nuts in open games
my favourite is the queen but my 2nd is tied with rooks and knights :P
i like pawns (if that's counted) because it can be promoted to any piece i like...
Rook for me.
I have to love the king the most - I spend some much time defending him...
