When do you sack on f7?

I've always saw other people's games where they sacked on f7. One thing I don't get, why do people do this kind of sack, and when do people do it?

I just played this game, and it's a decent example why one would sac on f7. In this one, there was a forceful continuation that won the piece back and put me a pawn up. It also gave me better attacking chances.

I might be 1762 Standard right now but I haven't played Standard in a long time, so don't state that fact.

Here's a pretty common theme I see, and just saw it again today. Black's attempt to pin white's knight on f3 backfires.
