Well, long blitz and quick are the different time ranges for live chess. If you're running out of time in blitz games, just play long games and people WILL accept your seeks. Unrated means that the game will not change your rating, while if it is rated, the game will change your rating.

First, any player who understands common courtesy will not get annoyed at you for taking a long time to move.
Second, you should be able to find online players that are around your skill level, even for "long" games.
Third, "unrated" means that the game will not affect your rating, but you will always have a chess.com rating (I guess it will stay at 1200 if you don't play any rated games). Although it is notoriously inaccurate, it helps give some idea of your skill level so you can find people at your level.
