I just want to play a normal game of chess and can't figure out how. You play awhile and make your move within reason. Is that not an option here?

I think I know what you're talking about, but the closest thing to it is online chess, which is turn based, meaning you can basically take as long as you want on the moves, but the games go by very slowly, typically a few days up to a couple weeks, depending on how well coordinated you and your opponents schedule matches up, though I have finished a (full length) game or two within just a day.

In live chess, you must play with time controls. Though I know a lot of casual OTB games don't have time controls, any professional match, say, in an actual OTB chess tournament, is going to have time controls, to make sure one player doesn't spend way longer on his/her moves than another. However, you can make your games in live chess pretty long (up to 2 hours per side, I believe) and timing out probably wont be a problem.
