That's not mate.  The Pawn on C6 can take the Rook.

Wrong. After 1.Be1, black can give check and white has to use it's second move to stop that.

The pawn can't take because it's pinned to the king by the queen on c8.

The knight on c5 is threatening mate by Nc5-a4 or Nc5xd7. The black queen is guarding both squares right now. If the bishop doesn't go to f5 (Bd5 for example), then Qg4! for black delays mate because she's still guarding both the a4 and d7 squares. The only way for the knight on c5 to go to a4 with mate is if the queen no longer guards a4, but at the same time, the knight can't get to d7 if the queen is also guarding that square. The bishop on f5 prevents both things from happening at once.

 

Check this out; after Bf5, only 4 pieces can move for black right now, BUT:

 1. If the d7 pawn moves, then Nd7#, because the queen no longer guards the d7 square.

2. If the rook moves, then the queen would be pinned to the king after Na4# or Nxd7#.

3. If the queen moves, then the rook would be pinned to the king after Na4# or Nxd7#. If she moves out of the d file (Qc4 for example), then Nxd7#. If she moves out of the 4th rank (Qd2 for example), then Na4#.Oh, and Qf8 doesn't allow it because of d7-d5 or d7-d6.

4. EDIT: If after 1.Bf5, Kxc5, then 2.Rxb5#.

Oh, and to answer your question, if Qf8, then 1...d6! or 1...d5! and checkmate is delayed.
